We were invited to a media night recently to hear from certified master brewers Hagen Dost and Bill Wesselink. They spoke at length about the brewing process, how they source their ingredients and how important water is to the whole process. What stood out to me the most was the enthusiasm that Hagen Dost displayed throughout the evening whenever he was able to talk about his craft.

Dovetail Brewery, as mentioned in the above video, produces inspired German and Belgian-style beers using traditional brewing methods. The brewery’s 22,000 square foot facility is located in Chicago’s Ravenswood Corridor. Home of several local Chicago breweries.

Dovetail Brewing plans to produce Lambic-style sour beers using traditional spontaneous fermentation like brewers do in Belgium. These beers are already in process, but will not be available for consumption until early 2018. Here you can see some of that exuberance I mentioned earlier. This guy not only loves beer. He knows beer. Can talk about it for days.

These guys are pros. Thier beers are high quality and they look beautiful in a glass. The taproom is a bring your own food type of place that’s also dog-friendly. Come thirsty. Bring your favorite meal along. Take the tour if you’ve got the time. I can’t wait to go back.
